Matcha Chia Pudding Parfaits with Berries and Granola Recipe


An easy vegan breakfast idea, Matcha Chia Pudding Parfaits layer creamy green tea chia pudding with crunchy granola, coconut flakes and fresh berries for a bright make-ahead breakfast or snack. The matcha gives the pudding its soft green color, while the berries, mint and coconut make each glass look fresh, colorful and ready to serve.

Ingredients


For the Matcha Chia Pudding

  • 1 ½ cups (360 ml.) unsweetened plain coconut milk beverage, oat milk or almond milk

  • ¼ cup (48 g.) chia seeds

  • 2 tbsp. (30 ml.) maple syrup, plus more to taste

  • 1 tsp. matcha powder

  • ½ tsp. vanilla extract

  • ¼ tsp. fine sea salt


For Layering and Serving

  • 1 cup (120 g.) vegan granola

  • ¼ cup (20 g.) unsweetened coconut flakes or coconut chips

  • ½ cup (75 g.) fresh blueberries

  • ½ cup (75 g.) fresh raspberries or sliced strawberries

  • 2 tbsp. (8 g.) fresh mint leaves

  • ¼ cup (60 g.) plain unsweetened coconut yogurt or plant-based yogurt, optional


Directions


  1. Add ¼ cup (60 ml.) of the plant milk to a medium bowl. Sift in the matcha powder and whisk until smooth.

  2. Add the remaining 1 ¼ cups (300 ml.) plant milk, chia seeds, maple syrup, vanilla and salt. Whisk well.

  3. Let the mixture stand for 10 minutes, then whisk again to keep the chia seeds evenly distributed.

  4. Cover and refrigerate for at least 4 hours or overnight, until the pudding is thick, creamy and spoonable.

  5. Before assembling, stir the pudding. If it is thicker than you like, add 1 to 2 tbsp. (15 to 30 ml.) plant milk and stir again.

  6. Spoon a small layer of coconut yogurt, if using, into the bottom of 2 glasses.

  7. Add a layer of matcha chia pudding, followed by a layer of granola and coconut flakes.

  8. Repeat with another layer of matcha chia pudding, then top with more granola, coconut flakes, blueberries, raspberries or strawberries and fresh mint.

  9. Serve right away for the most crunch or refrigerate for up to 1 hour after assembling.


Make It Yours


  • For a stronger matcha flavor, increase the matcha to 1 ½ tsp.

  • For a milder version, use ½ tsp. matcha powder.

  • For a creamier parfait, replace ½ cup (120 ml.) of the plant milk with canned light coconut milk.

  • For more fruit, add sliced banana, diced mango or kiwi between the layers. For extra crunch, add chopped almonds, walnuts, pumpkin seeds or sesame seeds just before serving.


Kitchen Notes


  • Sifting the matcha before whisking helps prevent small green clumps in the pudding. Starting with a small amount of plant milk makes it easier to create a smooth matcha mixture before adding the chia seeds.

  • The chia pudding should be thick enough to hold distinct layers in the glass. If it is too loose after chilling, stir in another 1 tsp. (4 g.) chia seeds and let it sit for 15 minutes.

  • Add the granola close to serving time if you want it to stay crisp. If the parfaits sit too long, the granola will soften into the pudding.


Pairs Well With


Serve these parfaits with hot green tea, iced coffee, almond butter toast, avocado toast, fresh orange slices, a small smoothie or a bowl of mixed berries.
